It’s been known that one of the things Americans living overseas miss the most is Mexican food. We are currently entertaining two lovely ladies who are visiting from Switzerland after studying abroad there since Feburary. I know Kimberly from Chapel Lane Presbyterian Church in Midland, MI, where the last time I saw her she was in 8th grade and I was in college. Imagine my surprise that she’s actually growing up and set to begin senior year of college in August! Kimberly and her friend Carolyn have been all over Switzerland, Europe and even Morocco in the last 5 months, so they have become travel pros before reaching Casa di Maul! Anyway, I thought that being a group of 4 Americans living overseas was a great excuse to create a tex-mex feast, so here’s what our spread consisted of:
Filling #1: dark chicken meat from the slow cooker. All I did was put the thighs and drumsticks in the bottom and dump salsa and white wine on top before cooking it on low for 9 hours.

Filling#2: Vegetarian choice. I lightly sautéed zucchini, then added chicory at the end of the process, before drizzling olio piccante on top. That made it kind of Italian tex-mex, so it was a perfect fit for an Italian dinner.

Ultimate Side Dish: homemade guacamole, which I made in the Vitamix.

All the fixin’s: these main events were served with many hefty sides, creating a smorgasbord of delights. Chopped lettuce, tomato, onion, cilantro, hot salsa, corn chips, tortillas, and the best part: Gruyere cheese that the girls offered us from Switzerland as a thank-you present. It really was an international text-mex effort!
Finally, my last vitamix creation of the day came: Banana chocolate ice cream, which I also made in the vitamix.

Overall, the result was guest-worthy, which happened to be great since we have some guests!
